Hobo Cookies

When you're all done making your pie crust take the bits left over. Roll into balls about a spoonful size and then flatten on a baking sheet. Sprinkle with cinnamon and sugar. Bake until lightly browned. If you make these real thin they will be crisp and sweet. You can also just take your scraps from rolling out the dough and bake them on the sheet. The cookies will be irregular in shape but less work.
