4 cups
flour
1 tbsp yeast
1/2 cup water
1/2 cup milk
1/2 cup veg. oil
1/4 cup sugar
1 tsp salt
2 eggs
Measure 1 1/2
cups flour into bowl and stir in yeast. Put water, milk, oil, sugar,
and salt into a saucepan and heat till lukewarm (But not hot - test
it on the inside of your arm). Add this to flour mixture and beat
till smooth. Stir in eggs and remainder of flour and beat once more
till smooth and elastic. Divide dough in two well buttered 1 pound
coffee tins; cover with flour sack or dish cloth and let rise
for about half an hour in a warm place. Remove cloth and bake at
375 for 35 min. or until browned. Let stand till bread shrinks slightly
from sides then remove.
