Ginger Pop

Take 5 1-2 gals. of water, 1-4 lb. ginger root, bruised, one-half oz. of tartaric acid, two and a half lbs. of white sugar, whites of 3 eggs well beat, 1 small tea-spoonful of lemon oil, 1 gill of yeast; boil the root for thirty minutes in 1 gallon of the water, strain off, and put the oil in while hot, mix. Make over night, and in the morning skim and bottle, keeping out sediments.
